Buckwheat Pancakes

Method:

In a large bowl, whisk together both flours, sugar, baking powder, baking soda, and salt. Set aside.   In a medium bowl, whisk together eggs, butter, buttermilk, and vanilla.  Make a well in the dry ingredients and add the wet. Fold together with a rubber spatula until just combined. Batter should still be a little lumpy.  Rest batter 10-15 minutes before cooking on a hot, oiled griddle.
