Substitute any nuts or fruit as desired—soak fruit in Brandy ahead of time for an extra kick. Also, feel free to add a spice (clove, cinnamon, ginger, sesame, or nutmeg, orange blossom) as you see fit.
Mixing: Sift dry ingredients into a mixing bowl. Add cubed butter to bowl and toss together. Pinch butter into dry ingredients until size of peas. Add pecans and apricots. Make a well in mixture and pour in cream. Gently fold with a spatula, until dough holds together. Turn dough to a floured surface and press into 2” disk. Cut into 8 wedges; brush tops with cream and sugar. Bake in a 400* oven for about 20 minutes, on a baking sheet, until golden.
